Make these muffins irresistible with the flavor of bacon.


  • 3 cups buttermilk baking mix
  • 1 cup milk
  • 1 large egg, lightly beaten
  • 1 cup shredded Cheddar cheese
  • 1/4 cup finely chopped onion
  • 1 (16-ounce) package HORMEL® BLACK LABEL® Bacon
  • 1/2 cup sugar


  1. Heat oven to 400°F. Grease bottom and sides of 36 miniature muffin cups.
  2. Cook bacon until crisp; drain on paper towels. Crumble bacon when cool.
  3. In bowl, stir together baking mix and sugar. Stir in milk and egg until moistened. Add bacon, cheese and onion; mix gently.
  4. Fill each muffin cup about three-fourths full with batter. Bake 20 to 25 minutes or until golden.
