2 tablespoons vegetable oil
2 1/2 cups thinly sliced new red potatoes
1 cup thinly sliced onion
1 tablespoon chopped garlic
2 teaspoons chopped fresh rosemary
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
1 (14-inch) Armenian cracker bread
1 1/2 cups shredded mozzarella cheese
1 cup HORMEL® PILLOW PACK® Turkey Pepperoni
Potato topper dip, if desired
Heat oven to 400°F.
In large skillet, heat oil over medium heat. Add potatoes, onion, garlic, rosemary, salt and pepper; cook, stirring occasionally, 20 minutes or until potatoes are browned and tender.
Place cracker bread on baking sheet. Sprinkle with 1/2 cup cheese and pepperoni; top with potato mixture and remaining 1 cup cheese.
Bake pizza 10 to 12 minutes or until cheese is melted. Cut into appetizer squares. Serve with dip, if desired.
