Bacon, Mushroom and Beef Skewers
Gluten Free , Grilling , Summer
7 ounces blue cheese, divided
1/3 cup sour cream
1/4 cup water
6 teaspoons honey, divided
1/3 cup balsamic vinegar
3 cloves garlic, minced
4 slices HORMEL® BLACK LABEL® Bacon
2 New York strip steaks, cut into cubes
12 small brown mushrooms
Salt and freshly ground pepper
To make blue cheese sauce, in medium saucepan, cook 5 ounces cheese, the sour cream, water and 1 teaspoon honey over medium heat, stirring, until cheese is melted and sauce is smooth and thickened. Whisk to remove any lumps if necessary. Keep warm.
To make balsamic glaze, in small saucepan, combine vinegar, garlic, remaining 5 teaspoons honey and pinch each salt and pepper over medium heat. Simmer 3 to 5 minutes or until slightly thickened.
Prepare grill for medium-high heat. Alternately thread bacon, steak and mushrooms onto skewers, weaving bacon between steak and mushrooms. Brush with balsamic glaze.
Grill skewers, turning occasionally and brushing with glaze, 8 to 10 minutes or until steak is cooked to desired doneness. Serve with blue cheese sauce and remaining 2 ounces cheese crumbled over skewers.
