Velvety smooth soup with a smoky kick from chipotle peppers.

Ingredients

  • 1 tablespoon olive oil
  • 2 cups chopped onions
  • 6 cloves garlic, minced
  • 2 EMBASA┬« Chipotle Peppers in Adobo Sauce, chopped
  • 4 cups chicken broth
  • 4 pounds butternut squash, peeled, seeded and chopped
  • 2 sprigs fresh rosemary
  • 3 tablespoons sour cream
  • 1/3 cup HORMEL┬« Real Bacon Pieces
  • Salt and freshly ground pepper, to taste

Directions

  1. In large pot, heat oil over medium-high heat; add onions. Cook, stirring occasionally, 5 minutes or until softened. Add garlic; cook and stir 1 minute longer or until fragrant.
  2. Add chipotles, broth, squash, rosemary and generous pinch each of salt and black pepper. Bring to a boil. Reduce heat to medium-low; cover. Simmer 20 minutes or until squash is very tender; cool 10 minutes. Remove and discard rosemary stems.
  3. In blender container, puree squash mixture in batches until smooth. Return soup to pot. (Or puree directly in pot with immersion blender.)
  4. Add sour cream to soup. Stir until well combined. Serve topped with additional sour cream, if desired and bacon pieces.
