Grilled Ham and Marinated Vegetable Salad

Combine the great flavors of grilled vegetables with grilled Cure 81® ham.


  • 2 medium eggplant, sliced lengthwise
  • 2 zucchini, sliced lengthwise
  • 2 yellow summer squash, sliced lengthwise
  • 1/3 cup olive oil plus additional for brushing, divided
  • 3 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon DI LUSSO® Honey Mustard
  • 1/3 cup basil pesto
  • 6 slices HORMEL® CURE 81® Boneless Ham
  • 1 (16.5-ounce) jar roasted red peppers, drained and sliced
  • Salt and freshly ground pepper, to taste


  1. Grease grill grate. Prepare grill.
  2. Brush eggplant, zucchini and summer squash with small amount of oil. Grill until slightly softened.
  3. In large bowl, whisk together 1/3 cup oil, the vinegar, mustard, garlic, salt and black pepper. Add grilled vegetables and roasted peppers; toss to coat. Cover; refrigerate 1 to 3 hours.
  4. Brush ham with small amount of oil. Grill 3 minutes on each side or until hot and grill marks appear. Serve with marinated vegetables and pesto.
