Serve this tasty salad scooped into red bell peppers or hollowed-out tomatoes, then garnish with fresh basil.


  • 1 (15-ounce) can garbanzo beans, drained and rinsed
  • 1/2 cup mayonnaise
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh basil
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon coarsely ground pepper
  • 2 cups small broccoli florets
  • 1/2 cup coarsely chopped red onion
  • 1/4 cup sunflower seeds
  • 8 slices HORMEL┬« NATURAL CHOICE┬« Bacon, cooked and coarsely chopped
  • Lettuce leaves, if desired


  1. To make dressing, in small bowl, stir together mayonnaise, cheese, lemon juice, basil, sugar, salt and pepper.
  2. In large bowl, toss together remaining ingredients except lettuce. Gently mix in dressing. Cover; refrigerate at least 1 hour to blend flavors.
  3. Line serving platter with lettuce. Spoon salad over lettuce. Sprinkle with additional sunflower seeds and Parmesan cheese, if desired.
