  • 4 large eggs
  • 2 tablespoons 2% or skim milk
  • 2 tablespoons chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 1 cup shredded Swiss or Cheddar cheese
  • 4 potato lefse or flour tortillas, heated
  • 1/4 cup lingonberries or fruit salsa, if desired
  • 4 slices HORMEL® NATURAL CHOICE® Bacon, cooked and coarsely chopped


  1. In bowl, stir together eggs, milk, onions, salt and pepper.
  2. Coat medium nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add egg mixture. Cook, stirring frequently, 2 to 3 minutes or until eggs are almost set. Stir in bacon and cheese. Cook 1 to 2 minutes longer or until eggs are set and cheese is melted.
  3. Spoon one-fourth of egg mixture onto each warm lefse. Roll up; slice diagonally in half. Serve with lingonberries or fruit salsa.
