Ingredients

  • 1 cup sliced celery
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (28-ounce) can Italian-style tomatoes in puree
  • 1 (14.5-ounce) can chicken broth
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon coarsely ground pepper
  • 1 cup HORMEL® Pepperoni, diced
  • 1 tablespoon light olive oil

Directions

  1. In large saucepan, sauté celery, onion and garlic in oil until tender. Add remaining ingredients except pepperoni. Bring to a boil.
  2. Reduce heat. Simmer soup, stirring occasionally, 25 to 30 minutes. Stir in pepperoni.
